Instructions
- Preheat the oven to 425°F (220°C) and cook the tater tots on a baking sheet according to the package instructions, about 20-25 minutes, until golden and crispy.
- While the tater tots are cooking, heat a large skillet over medium heat. Add the sausage and cook, breaking it apart with a spatula, until browned and cooked through.
- Stir in the flour and cook for 1-2 minutes until it becomes a paste.
- Gradually pour in the milk, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 5-7 minutes until it thickens. Season with garlic powder, black pepper, and salt to taste.
- In a separate skillet, melt butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, or cook to your desired doneness.
- To assemble the bowls: Divide the crispy tater tots between 4 bowls. Top each with a portion of sausage gravy and one egg.
