Description

For the Potatoes:

  • 4 large russet potatoes, scrubbed and diced

For the Taco Meat:

  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning (or homemade blend)
  • 1/2 cup water

Toppings:

  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1 avocado, diced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup black olives, sliced (optional)
  • 1 jalapeño, sliced (optional)

Instructions

  • Prepare the Potatoes:

    • Preheat oven to 425°F (220°C).
    • Toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
    • Spread in a single layer on a baking sheet.
    • Roast for 25-30 minutes, flipping halfway, until crispy and golden brown.
  • Cook the Taco Meat:

    • In a skillet over medium heat, cook ground beef until browned.
    • Drain excess fat, then add taco seasoning and water.
    • Simmer for 5 minutes until thickened.
  • Assemble the Taco Potatoes:

    • Once potatoes are done, transfer to a serving dish.
    • Top with taco meat and shredded cheese (let it melt slightly).
    • Add sour cream, salsa, avocado, green onions, cilantro, and any other desired toppings.
  • Serve & Enjoy:

    • Serve immediately as a main dish or a fun appetizer!
