Ingredients
– 1 lb ground beef
– 1 small onion, diced
– 1 packet taco seasoning (or homemade mix: chili powder, cumin, garlic powder, paprika, salt, and pepper)
– 1/2 cup water
– 1 cup refried beans
– 1 cup salsa
– 1 cup shredded cheddar cheese
– 1 cup crushed tortilla chips
– Optional: 1/2 cup corn kernels
– Optional: 1/2 cup diced tomatoes
– Optional: 1/2 cup sliced black olives
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet over medium heat, sauté the diced onion until soft. Add the ground beef and cook until browned. Drain excess fat.
3. Stir in the taco seasoning and water, simmering until the mixture thickens, about 5 minutes.
4. In a greased pie dish or casserole dish, spread a layer of refried beans evenly over the bottom.
5. Add the cooked beef mixture over the beans, then layer with salsa.
6. Top with shredded cheddar cheese and crushed tortilla chips. For extra texture and flavor, sprinkle optional corn, tomatoes, and black olives on top.
7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
8. Remove from the oven, garnish with chopped cilantro if desired, and serve hot.
