Ingredients

Units Scale

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 1 (14 oz) can sweetened condensed milk
  • 1 (8 oz) container cream cheese, softened
  • 1 cup heavy cream, chilled
  • 1/2 cup whole milk
  • 2 teaspoons mint extract (or more to taste)
  • 2 drops green food coloring (adjust for desired color)

For the Topping:

  • 1 cup heavy cream, whipped to soft peaks
  • Optional: Extra graham cracker crumbs or a light dusting of powdered sugar for garnish

Instructions

  • Prepare the Crust:

    • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
    • Refrigerate the crust for at least 30 minutes to set.
  • Make the Filling:

    • In a large bowl, beat the softened cream cheese until smooth.
    • Add the sweetened condensed milk and whole milk, mixing until well combined.
    • Stir in the mint extract and green food coloring until the color is evenly distributed.
    • In a separate chilled bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and smooth.
  • Assemble the Pie:

    • Pour the filling into the prepared crust and smooth the top with a spatula.
    • Refrigerate the pie for at least 4 hours (or overnight) to allow the filling to set properly.

  • Finish and Serve:

    • Before serving, top with a generous layer of freshly whipped cream.
    • Garnish with extra graham cracker crumbs or a light dusting of powdered sugar if desired.
    • Slice and enjoy the refreshing, minty delight!

Notes

  • Adjust the mint extract to your taste. Start with 2 teaspoons and add a drop or two more if you prefer a stronger flavor.
  • For a firmer texture, use full-fat cream cheese and heavy cream.
  • This pie works best when made a day ahead, allowing the flavors to meld and the filling to set.
