- 1 cup fresh or bottled fruit juice (green juice like lime, apple, or kiwi works great)
- 3 tbsp unflavored gelatin
- 2 tbsp honey or maple syrup (for sweetness)
- 1 tsp lemon juice (optional, for a tangy flavor)
- 1/2 tsp vanilla extract (optional)
- Green food coloring (optional, for a vibrant green color)
Instructions
- In a small saucepan, heat the fruit juice over medium heat until warm (not boiling).
- Sprinkle the gelatin over the warm juice and stir until the gelatin dissolves completely, about 2 minutes.
- Add the honey, lemon juice, and vanilla extract, stirring until fully combined.
- If you want a brighter green color, add a few drops of green food coloring.
- Pour the mixture into a shamrock-shaped silicone mold or any mold of your choice.
- Refrigerate for 2-3 hours or until the gummies are firm and set.
- Once set, remove the gummies from the mold and store them in an airtight container in the refrigerator.
Notes
- These gummies can be made with any fruit juice you prefer; however, using green-colored juice keeps them festive for Saint Patrick’s Day.
- For a firmer texture, add an extra tablespoon of gelatin.
- You can also make a layered effect by pouring different colored juices and letting each layer set before adding the next.
