- 1 box (3.4 oz) instant pistachio pudding mix
- 1 package (yellow cake mix, 15.25 oz)
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup chopped pistachios (optional, for added crunch)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, combine the cake mix, pistachio pudding mix, water, oil, eggs, and vanilla extract. Beat on medium speed for 2 minutes until smooth and well-combined.
- Fold in chopped pistachios if desired.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan.
- Once cooled, top with whipped cream or more chopped pistachios if desired, and serve!
Notes
- For a more intense pistachio flavor, substitute some of the water with pistachio milk or add a few drops of pistachio extract.
- If you prefer, you can serve this cake with a dusting of powdered sugar instead of whipped cream.
