Description

A fun and festive treat for Saint Patrick’s Day! This pistachio pudding cake is a deliciously rich, moist cake with a hidden creamy pudding layer. Green in color and full of flavor, it’s the perfect dessert to celebrate the occasion!


Ingredients

  • 1 box (3.4 oz) instant pistachio pudding mix
  • 1 package (yellow cake mix, 15.25 oz)
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup chopped pistachios (optional, for added crunch)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  • In a large mixing bowl, combine the cake mix, pistachio pudding mix, water, oil, eggs, and vanilla extract. Beat on medium speed for 2 minutes until smooth and well-combined.
  • Fold in chopped pistachios if desired.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely in the pan.
  • Once cooled, top with whipped cream or more chopped pistachios if desired, and serve!

Notes

  • For a more intense pistachio flavor, substitute some of the water with pistachio milk or add a few drops of pistachio extract.
  • If you prefer, you can serve this cake with a dusting of powdered sugar instead of whipped cream.
