Description

  • 2 teaspoons lemon juice
  • 12 tablespoons hot honey (adjust based on your spice preference)

 

  • Fresh herbs (such as parsley or thyme) for garnish

Instructions

  • Preheat and Prepare:

    • Preheat your oven to 400°F (200°C).
    • Toss the carrot sticks with olive oil, salt, and pepper, ensuring they are evenly coated.
  • Roast the Carrots:

    • Spread the carrots out on a baking sheet in a single layer.
    • Roast for 25–30 minutes, or until they are tender and lightly caramelized, stirring halfway through for even cooking.
  • Make the Whipped Ricotta:

    • In a bowl, combine the ricotta cheese, heavy cream (if using), lemon juice, a pinch of salt, and pepper.
    • Whisk or beat until the mixture is smooth and slightly airy.

 

  • Assemble and Serve:

    • Arrange the roasted carrots on a serving plate.
    • Dollop or spread the whipped ricotta over the carrots.
    • Drizzle hot honey generously over the top.
    • Garnish with fresh herbs and serve warm.

Notes

Adjust the amount of hot honey to control the level of spice and sweetness.

For a tangier variation, you can substitute part or all of the ricotta with goat cheese.
