Description

Delight in these Pistachio Dream Cookie Bars – a nutty, chewy dessert bursting with real pistachio flavor and a hint of vanilla. Perfect for tea time or a sweet treat any time of day.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted pistachios, roughly chopped
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder

 

  • (Optional) 1/4 cup white chocolate chips

Instructions

  • Preheat & Prep: Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  • Cream Butter & Sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add Eggs & Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, salt, baking soda, and baking powder.
  • Mix Batter: Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in Extras: Gently fold in the chopped pistachios and, if using, white chocolate chips.
  • Bake: Spread the batter evenly into the prepared pan. Bake for 20-25 minutes or until the edges are golden and a toothpick inserted into the center comes out mostly clean.

 

  • Cool & Slice: Allow the bars to cool completely in the pan before cutting into squares.

Notes

  • For an enhanced nutty flavor, lightly toast the pistachios before adding them to the batter.
  • Ensure the bars are completely cooled to achieve a clean cut and chewy texture.
  • Store leftovers in an airtight container for up to 4 days.
