- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted pistachios, roughly chopped
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- (Optional) 1/4 cup white chocolate chips
Instructions
- Preheat & Prep: Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Cream Butter & Sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add Eggs & Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, salt, baking soda, and baking powder.
- Mix Batter: Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in Extras: Gently fold in the chopped pistachios and, if using, white chocolate chips.
- Bake: Spread the batter evenly into the prepared pan. Bake for 20-25 minutes or until the edges are golden and a toothpick inserted into the center comes out mostly clean.
- Cool & Slice: Allow the bars to cool completely in the pan before cutting into squares.
Notes
- For an enhanced nutty flavor, lightly toast the pistachios before adding them to the batter.
- Ensure the bars are completely cooled to achieve a clean cut and chewy texture.
