Ingredients
– 1 cup cooked and mashed pinto beans
– 1 cup granulated sugar
– 1/2 cup brown sugar
– 1/2 cup unsalted butter, melted
– 2 eggs, beaten
– 1 tsp vanilla extract
– 1/2 tsp ground cinnamon
– 1/4 tsp ground nutmeg
– 1 unbaked 9-inch pie crust
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a mixing bowl, combine mashed pinto beans, granulated sugar, brown sugar, and melted butter. Stir well.
3. Add the beaten eggs, vanilla extract, cinnamon, and nutmeg. Mix until smooth and fully incorporated.
4. Pour the mixture into the unbaked pie crust, spreading it evenly.
5. Bake for 40–45 minutes or until the filling is set and slightly golden on top.
6. Let the pie cool completely before slicing.
7. Serve plain or with a dollop of whipped cream.
Notes
