Description

This Pineapple Upside Down Cake Fudge is a unique twist on the classic dessert, blending the flavors of buttery caramelized pineapple and cherries with creamy, melt-in-your-mouth fudge. Perfect for parties, holidays, or as a sweet treat anytime!


Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup brown sugar
  • 1 cup crushed pineapple, drained
  • 10 maraschino cherries, halved
  • 3 cups white chocolate chips
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  • Prepare the Pan:

    • Line an 8×8-inch baking pan with parchment paper.
    • Lightly grease it to prevent sticking.
  • Caramelize the Pineapple:

    • In a small saucepan over medium heat, melt the butter and brown sugar together.
    • Stir in the crushed pineapple and cook for 3-4 minutes until slightly caramelized.
    • Remove from heat and let it cool slightly.
  • Melt the Fudge Base:

    • In a microwave-safe bowl, combine white chocolate chips and sweetened condensed milk.
    • Microwave in 30-second intervals, stirring in between, until smooth and fully melted.
    • Stir in vanilla extract and salt.
  • Assemble the Fudge:

    • Spread half of the white chocolate fudge mixture into the prepared pan.
    • Evenly distribute the caramelized pineapple over the fudge.
    • Gently spread the remaining fudge mixture over the top.
  • Add Cherries & Chill:

    • Press the halved maraschino cherries into the top.
    • Refrigerate for at least 4 hours, or until fully set.
  • Cut & Serve:

    • Once firm, cut into squares and enjoy!
