- 1 pound boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 1 can (15 oz) pineapple chunks, drained
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup rice vinegar
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups cooked rice
Instructions
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook until browned on all sides. Remove from skillet and set aside.
- Sauté the onion: In the same skillet, add chopped onion and cook until softened.
- Add pineapple & sauce: Stir in the pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using). Let simmer for 3-5 minutes.
- Combine: Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes.
- Serve: Serve hot over cooked rice.
