Instructions
- In a mixing bowl, combine the peanut butter, powdered sugar, and vanilla extract. Stir until smooth and fully combined.
- Line a muffin tin with cupcake liners.
- Fill the bottom of each liner with a spoonful of peanut butter mixture, pressing it down gently to form a base.
- Add a layer of mini marshmallows on top of the peanut butter base.
- In a microwave-safe bowl, melt the chocolate chips with coconut oil in 20-second intervals, stirring in between, until fully melted and smooth.
- Pour the melted chocolate over the marshmallows in each cup, ensuring it covers the marshmallows completely.
- Refrigerate the cups for at least 1 hour, or until the chocolate has hardened.
- Once set, remove the cups from the muffin tin and peel off the cupcake liners. Serve and enjoy!
