Description

  • 1 cup peanut butter (creamy or chunky)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups mini marshmallows
  • 2 cups milk chocolate chips (or dark chocolate chips)
  • 1 tbsp coconut oil (for smoother chocolate coating)

Instructions

  • In a mixing bowl, combine the peanut butter, powdered sugar, and vanilla extract. Stir until smooth and fully combined.
  • Line a muffin tin with cupcake liners.
  • Fill the bottom of each liner with a spoonful of peanut butter mixture, pressing it down gently to form a base.
  • Add a layer of mini marshmallows on top of the peanut butter base.
  • In a microwave-safe bowl, melt the chocolate chips with coconut oil in 20-second intervals, stirring in between, until fully melted and smooth.
  • Pour the melted chocolate over the marshmallows in each cup, ensuring it covers the marshmallows completely.
  • Refrigerate the cups for at least 1 hour, or until the chocolate has hardened.
  • Once set, remove the cups from the muffin tin and peel off the cupcake liners. Serve and enjoy!
