Description

Crunchy cornflakes and creamy peanut butter come together in these no-bake, easy-to-make cookies that are a perfect sweet and salty treat.


Ingredients

  • 1 cup peanut butter
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 4 cups cornflakes
  • 1/2 cup chocolate chips (optional)

Instructions

  1. In a medium saucepan, combine peanut butter, sugar, and corn syrup over medium heat. Stir until the mixture is smooth and the sugar has dissolved.
  2. Remove from heat and stir in vanilla extract.
  3. Fold in the cornflakes, gently mixing until all of the cornflakes are coated with the peanut butter mixture.
  4. If using, stir in the chocolate chips until evenly distributed.
  5. Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  6. Let the cookies cool and set at room temperature for about 30 minutes before serving.

Notes

  • If you prefer a firmer cookie, refrigerate them for about 1 hour after they have set at room temperature.
  • You can drizzle melted chocolate over the cookies for added flavor.
