Crunchy cornflakes and creamy peanut butter come together in these no-bake, easy-to-make cookies that are a perfect sweet and salty treat.

- 1 cup peanut butter
- 1 cup sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 4 cups cornflakes
- 1/2 cup chocolate chips (optional)
Instructions
- In a medium saucepan, combine peanut butter, sugar, and corn syrup over medium heat. Stir until the mixture is smooth and the sugar has dissolved.
- Remove from heat and stir in vanilla extract.
- Fold in the cornflakes, gently mixing until all of the cornflakes are coated with the peanut butter mixture.
- If using, stir in the chocolate chips until evenly distributed.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Let the cookies cool and set at room temperature for about 30 minutes before serving.
Notes
- If you prefer a firmer cookie, refrigerate them for about 1 hour after they have set at room temperature.
- You can drizzle melted chocolate over the cookies for added flavor.
