This Pancake Sausage Casserole combines fluffy pancakes and savory breakfast sausage in a delicious baked dish. It’s perfect for weekend brunch, meal prep, or feeding a crowd with minimal effort!
Ingredients
– 1 lb breakfast sausage (cooked and crumbled)
– 2 cups pancake mix
– 1 cup milk
– 2 eggs
– 1 tsp vanilla extract
– 1 tbsp maple syrup (optional)
– 1/2 tsp cinnamon (optional)
– Butter or cooking spray (for greasing the baking dish)
Instructions
1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
2. In a skillet over medium heat, cook the sausage until browned. Drain excess grease and set aside.
3. In a mixing bowl, combine pancake mix, milk, eggs, vanilla extract, maple syrup, and cinnamon. Stir until smooth.
4. Pour half of the pancake batter into the greased baking dish.
5. Evenly distribute the cooked sausage over the batter.
6. Pour the remaining pancake batter over the top, spreading evenly.
7. Bake for 25–30 minutes or until golden brown and set in the middle.
8. Let cool slightly before slicing. Serve with additional maple syrup if desired.
Notes
– For extra flavor, add shredded cheese or a sprinkle of powdered sugar before serving.
– Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
– Swap out the sausage for cooked bacon or turkey sausage for a different variation.
