Description

Enjoy a deliciously crispy side dish featuring oven-fried potatoes and tender onions. Seasoned with garlic and herbs, this comforting recipe is versatile enough to serve as a hearty side or even a main dish when topped with a fried egg.

 


Ingredients

– 2 lbs potatoes (russet or Yukon Gold), sliced into 1/2-inch pieces

– 1 large onion, cut into wedges

– 1/4 cup canola oil

– 1/4 cup olive oil

– 4 garlic cloves, minced

– Salt and pepper, to taste

– Optional: 1 packet onion soup mix or 1 tablespoon fresh rosemary (or your favorite herb)


Instructions

1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

2. In a large bowl, toss the sliced potatoes and onion wedges with the canola oil, olive oil, minced garlic, salt, pepper, and optional onion soup mix or rosemary.

3. Spread the mixture in a single, even layer on the prepared baking sheet.

4. Bake in the preheated oven for 35–40 minutes, flipping halfway through, until the potatoes are golden and crispy and the onions are tender.

5. Remove from the oven and serve immediately. For a heartier meal, top with a fried or poached egg.

 


Notes

– For extra crispiness, you may parboil the potatoes for 5 minutes before tossing with the seasonings.

– Adjust the seasoning to your taste. Experiment with additional herbs or spices (such as paprika or thyme) for a different flavor profile.

– This recipe works great as a side dish or as a base for a light main when topped with protein.
