  • 1 cup panko breadcrumbs
  • 1/2 cup cornmeal
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Assembly:

  • 2 large eggs, beaten
  • Cooking spray or a light drizzle of olive oil
  • Lemon wedges, for serving (optional)
  • Fresh parsley, chopped (optional garnish)

Instructions

  • Preheat Oven & Prepare Shrimp:

    • Preheat your oven to 425°F (220°C).
    • In a medium bowl, combine the shrimp with buttermilk, and season lightly with salt and pepper. Let them marinate for 5 minutes.
  • Prepare the Coating:

    • In a separate shallow dish, mix together the flour, panko breadcrumbs, cornmeal, garlic powder, paprika, cayenne pepper, salt, and black pepper.
  • Dredge the Shrimp:

    • Dip each shrimp into the beaten eggs, allowing any excess to drip off.
    • Then, coat the shrimp evenly with the breadcrumb mixture. Press gently to help the coating adhere.
  • Bake to Perfection:

    • Arrange the coated shrimp in a single layer on a baking sheet lined with parchment paper.
    • Lightly spray or drizzle the shrimp with olive oil to enhance crispiness.
    • Bake in the preheated oven for 10–12 minutes or until the shrimp are pink, opaque, and the coating is golden and crisp. Flip them halfway through for even baking.
  • Serve:

    • Remove from the oven and transfer to a serving platter.
    • Garnish with chopped parsley and serve with lemon wedges on the side. Enjoy hot with your favorite dipping sauce if desired.
