Ingredients
For the Crust:
1 1/2 cups (190g) all-purpose flour
1/2 cup (60g) powdered sugar
1/4 tsp salt
1/2 cup (115g) unsalted butter, cold and cubed
1 large egg yolk
For the Lemon Filling:
1 cup (200g) granulated sugar
3 large eggs
3 large egg yolks
1 tbsp lemon zest
1/2 cup (120ml) fresh lemon juice (about 3–4 lemons)
1/2 cup (115g) unsalted butter, cubed
1/4 cup (60ml) heavy cream
Instructions
- 1. Make the Crust:
- In a food processor, combine flour, powdered sugar, and salt. Add cold butter and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and pulse until the dough comes together.
- Press the dough into a 9-inch tart pan with a removable bottom. Chill for 30 minutes.
- Preheat the oven to 375°F (190°C). Bake the crust for 15-20 minutes, or until golden. Let it cool.
- 2. Make the Lemon Filling:
- In a saucepan, whisk together sugar, eggs, egg yolks, lemon zest, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens (about 8-10 minutes).
- Remove from heat and stir in butter and heavy cream until smooth. Strain the filling through a sieve to ensure it’s silky.
- 3. Assemble the Tart:
- Pour the lemon filling into the cooled crust. Smooth the top with a spatula.
- Chill the tart in the refrigerator for at least 4 hours, or until set.
- 4. Serve:
- Slice and serve chilled. Garnish with whipped cream, fresh berries, or a dusting of powdered sugar if desired.
Notes
For a stronger lemon flavor, add an extra tablespoon of lemon zest.
Ensure the crust is fully cooled before adding the filling to prevent sogginess.
Store leftovers in the refrigerator for up to 3 days.
