- 1 box (9 oz) lemon flavored gelatin
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup heavy cream
- 1 package (9 oz) shortbread cookies (or graham cracker crust)
- 2 tablespoons butter, melted
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Crush the shortbread cookies into fine crumbs and combine with melted butter. Press the mixture into the bottom of a 9×9-inch baking dish to form a crust.
- Bake the crust for 10 minutes, then remove and let it cool completely.
- In a medium bowl, beat the cream cheese with powdered sugar until smooth. Stir in the lemon gelatin, lemon juice, and lemon zest.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Spread the lemon cream mixture evenly over the cooled crust.
- Chill the bars in the refrigerator for at least 2 hours to allow the filling to set.
- Cut into squares and serve chilled.
Notes
- For extra lemon flavor, you can top the bars with additional lemon zest or a drizzle of lemon glaze.
- Make sure to let the bars set completely in the fridge to ensure they slice cleanly.
