Instructions

Step 1: Grill the Sweet Potatoes

  1. Preheat a grill or grill pan to medium heat.
  2. Toss the sweet potato slices with olive oil, salt, pepper, and smoked paprika.
  3. Grill for 4-5 minutes per side until tender and lightly charred. Set aside.

Step 2: Make the Cranberry Pepita Pesto
