- 1 lb sirloin steak, cut into 1-inch cubes
- 1/2 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Wooden or metal skewers
Chimichurri Sauce:
- 1/2 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
- 1/2 tsp dried oregano
Instructions
- Prepare the skewers: Soak wooden skewers in water for 30 minutes if using.
- Marinate the steak and shrimp: In a large bowl, toss the steak and shrimp with olive oil, salt, black pepper, smoked paprika, and garlic powder. Let marinate for at least 15 minutes.
- Assemble the skewers: Thread the steak, shrimp, bell peppers, and onion onto the skewers, alternating ingredients.
- Preheat the grill: Heat a grill or grill pan to medium-high heat. Lightly oil the grates.
- Grill the skewers: Cook for 3-4 minutes per side, turning occasionally, until the steak reaches desired doneness and shrimp is opaque.
- Make the chimichurri sauce: In a small bowl, mix parsley, cilantro, garlic, olive oil, red wine vinegar, salt, red pepper flakes, and oregano.
- Serve: Drizzle chimichurri over the grilled skewers and enjoy!
Notes
- You can substitute sirloin steak with ribeye or filet mignon for a more tender bite.
- If using metal skewers, no need to soak them in water.
- Serve with a side of rice, grilled vegetables, or a fresh salad.
