Description

Juicy steak and succulent shrimp skewered together and grilled to perfection, then drizzled with a vibrant chimichurri sauce. These surf and turf skewers are perfect for a summer BBQ or a special occasion.


Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1/2 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Wooden or metal skewers

Chimichurri Sauce:

 

  • 1/2 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes
  • 1/2 tsp dried oregano

Instructions

  • Prepare the skewers: Soak wooden skewers in water for 30 minutes if using.
  • Marinate the steak and shrimp: In a large bowl, toss the steak and shrimp with olive oil, salt, black pepper, smoked paprika, and garlic powder. Let marinate for at least 15 minutes.
  • Assemble the skewers: Thread the steak, shrimp, bell peppers, and onion onto the skewers, alternating ingredients.
  • Preheat the grill: Heat a grill or grill pan to medium-high heat. Lightly oil the grates.
  • Grill the skewers: Cook for 3-4 minutes per side, turning occasionally, until the steak reaches desired doneness and shrimp is opaque.
  • Make the chimichurri sauce: In a small bowl, mix parsley, cilantro, garlic, olive oil, red wine vinegar, salt, red pepper flakes, and oregano.

 

  • Serve: Drizzle chimichurri over the grilled skewers and enjoy!

Notes

  • You can substitute sirloin steak with ribeye or filet mignon for a more tender bite.
  • If using metal skewers, no need to soak them in water.
  • Serve with a side of rice, grilled vegetables, or a fresh salad.
