Ingredients
– 1 cup green olives, pitted
– 2 tablespoons capers, drained
– 2 garlic cloves
– 2 tablespoons fresh parsley (optional)
– 2 tablespoons lemon juice
– 1/4 cup extra virgin olive oil
– Black pepper to taste
Instructions
1. In a food processor, combine green olives, capers, garlic, parsley, and lemon juice.
2. Pulse a few times until coarsely chopped.
3. Slowly add the olive oil while pulsing until the mixture becomes a coarse paste.
4. Season with black pepper to taste.
5. Serve immediately or store in an airtight container in the refrigerator for up to one week.
