Description

Enjoy a deliciously crispy chicken smothered in a creamy, rich Parmesan mushroom sauce. Ingredients

– 4 boneless, skinless chicken breasts

– Salt and pepper, to taste

– 1 cup all-purpose flour

– 2 large eggs, beaten

– 1 cup breadcrumbs

– 1/2 cup grated Parmesan cheese (for breading)

– 3 tbsp olive oil

– 2 tbsp butter

– 1 cup mushrooms, sliced

– 2 cloves garlic, minced

– 1 cup heavy cream

– 1/2 cup chicken broth

– 1/2 cup grated Parmesan cheese (for sauce)

– Fresh parsley, for garnish (optional)


Instructions

1. Season the chicken breasts with salt and pepper.

2. Dredge each chicken breast in flour, dip into the beaten eggs, and coat with a mixture of breadcrumbs and 1/2 cup grated Parmesan cheese.

3. Heat olive oil in a large skillet over medium heat and fry the chicken for about 5-6 minutes per side until golden and crispy. Remove the chicken and set aside.

4. In the same skillet, melt the butter and sauté the sliced mushrooms and minced garlic until soft.

5. Deglaze the pan with the chicken broth and let it simmer for a few minutes.

6. Stir in the heavy cream and the additional 1/2 cup grated Parmesan cheese, allowing the sauce to thicken slightly.

7. Return the chicken to the skillet, spoon the sauce over it, and garnish with fresh parsley.

8. Serve hot with your choice of rice, pasta, or a fresh salad.
