Description

This Easy Marinated Cheese Appetizer is a flavorful, no-fuss dish featuring cubes of cheese, savory salami, and tangy pickles marinated in a delicious herb-infused dressing. Perfect for parties, charcuterie boards, or as a quick appetizer!

Ingredients

Units Scale
  • 8 oz cheddar cheese, cut into cubes
  • 8 oz Monterey Jack or mozzarella cheese, cut into cubes
  • 4 oz salami, sliced into small pieces
  • 1/2 cup dill pickles, sliced into rounds or small chunks
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar (or white vinegar)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped (optional)

Instructions

  1. Prepare the ingredients: Cut the cheese into bite-sized cubes, slice the salami into small pieces, and chop the pickles.
  2. Make the marinade: In a small bowl, whisk together olive oil, vinegar, Dijon mustard, Italian seasoning, garlic powder, onion powder, red pepper flakes (if using), salt, and black pepper.
  3. Combine everything: In a large bowl or shallow dish, mix the cheese cubes, salami, and pickles. Pour the marinade over the mixture and toss gently to coat evenly.
  4. Marinate: Cover and refrigerate for at least 1 hour (or up to 24 hours) to allow the flavors to meld.
  5. Serve: Garnish with fresh parsley and basil before serving. Enjoy as is, or serve with crackers or toothpicks for easy snacking!

Notes

  • You can use different types of cheese like Gouda, Swiss, or Pepper Jack for variety.
  • For extra flavor, add chopped olives or roasted red peppers.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
