Instructions
- In a large bowl, toss the sliced cucumbers with a pinch of salt and let sit for 5 minutes. Drain any excess liquid.
- Add the shredded imitation crab, diced avocado, and green onion to the bowl.
- In a small bowl, whisk together the mayonnaise, soy sauce, rice vinegar, sesame oil, and sriracha (if using).
- Pour the dressing over the cucumber mixture and toss gently to combine.
- Sprinkle with sesame seeds and nori flakes before serving.
Notes
- Use real crab meat for an upgraded version.
- Add cooked sushi rice to make it more filling.
- Garnish with extra nori, sesame seeds, or a drizzle of spicy mayo for extra flavor.
