Ingredients

Units Scale

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 1 package (3 oz) lemon Jell-O
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract

For the Topping (Optional):

  • Whipped cream
  • Festive pastel sprinkles or edible decorations

Instructions

  • Prepare the Crust:

    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
    • (Optional) Bake the crust at 350°F (175°C) for 8–10 minutes to help set it. Allow to cool completely.
  • Make the Filling:

    • In a heatproof bowl, dissolve the lemon Jell-O in 1 cup of boiling water. Stir until completely dissolved.
    • Stir in 1/2 cup cold water and let the mixture cool to room temperature.
    • Once slightly cooled, whisk in the sweetened condensed milk, heavy cream, and vanilla extract until smooth and well combined.
    • Pour the filling into the prepared crust, spreading it evenly.
  • Chill and Set:

    • Refrigerate the pie for at least 4 hours, or until the filling is fully set and firm.
  • Garnish & Serve:

    • Before serving, top with a dollop of whipped cream and a sprinkle of festive pastel sprinkles or your favorite edible decorations.
    • Slice and enjoy this light, tangy dessert that captures the spirit of Easter!

Notes

  • If you prefer a firmer crust, chill it in the refrigerator for about 15 minutes before adding the filling.
  • For a fun twist, try mixing in a few drops of food coloring into the filling to create a marbled pastel effect.
  • This pie is best served cold. Store any leftovers in the refrigerator.
