Ingredients
– 2 cups crushed graham crackers (or crushed cookies)
– 1 cup creamy peanut butter (or caramel for variation)
– 1/2 cup powdered sugar
– 1/2 tsp vanilla extract
– 1 1/2 cups chocolate chips (dark, milk, or white)
– 1 tbsp coconut oil or butter (for smooth chocolate coating)
– 1/4 cup chopped nuts (optional, for coating)
– 1/4 cup shredded coconut (optional)
Instructions
1. In a mixing bowl, combine the crushed graham crackers, peanut butter, powdered sugar, and vanilla extract. Mix until a thick dough forms.
2. Roll the dough into small bite-sized balls and place them on a parchment-lined baking sheet.
3. Freeze the balls for at least 20 minutes to firm up.
4. In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30-second intervals, stirring in between until smooth.
5. Using a fork or toothpick, dip each frozen ball into the melted chocolate, coating it completely. Let the excess drip off.
6. Place the coated balls back onto the parchment paper and sprinkle with nuts or shredded coconut if desired.
7. Refrigerate for 30 minutes, or until the chocolate is fully set.
8. Serve chilled or at room temperature. Enjoy!

– You can swap peanut butter with almond butter or cookie butter for a different flavor.
