Description

This Cucumber, Onion & Tomato Salad is a refreshing and light side dish, perfect for warm weather meals. Ingredients

  • 1 tsp Dijon mustard

  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional)
  • 1 tbsp fresh dill, chopped (optional)

Instructions

  • In a large bowl, combine the sliced cucumber, chopped tomato, and sliced onion.
  • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey (if using), salt, and pepper until well combined.
  • Pour the dressing over the vegetables and toss gently to coat everything evenly.
  • If desired, garnish with fresh parsley and dill.
  • Serve immediately or refrigerate for 15-30 minutes to allow the flavors to marinate before serving.
