Description

A hearty and comforting dish featuring tender, slow-cooked corned beef paired with cabbage, potatoes, and carrots. Perfect for a cozy meal, this recipe infuses traditional flavors in an easy, one-pot crockpot meal.

 


Ingredients

– 3-4 lbs corned beef brisket (with spice packet, if included)

– 1 large onion, quartered

– 4 cups water

– 2 cups beef broth

– 2 bay leaves

– 1 tsp black peppercorns

– 1 head green cabbage, cut into wedges

– 6 small potatoes, quartered

– 4 carrots, peeled and cut into chunks

– 3 cloves garlic, minced

– Optional: 1 tbsp mustard or horseradish for serving


Instructions

1. Rinse the corned beef brisket under cold water to remove excess salt and any brine.

2. Place the brisket in the crockpot. Add the quartered onion, minced garlic, bay leaves, and black peppercorns.

3. Pour in the water and beef broth, ensuring the meat is mostly submerged.

4. Cover and cook on low for 7-8 hours, or until the brisket is tender.

5. About 1.5 hours before serving, add the cabbage wedges, potatoes, and carrots to the crockpot.

6. Continue cooking until the vegetables are tender.

7. Remove the meat and vegetables from the crockpot. Slice the corned beef against the grain and serve with the vegetables.

8. Drizzle with a little mustard or horseradish, if desired, for an extra kick.

– Cooking times may vary depending on your crockpot; adjust as needed.

– Let the meat rest for 5-10 minutes before slicing for best texture.

– Save leftover broth for a warming soup base.
