Description

Tender beef tips are slowly cooked in a rich, savory gravy until melt-in-your-mouth. Served over hearty egg noodles, this comforting dish is perfect for a family dinner or a cozy weeknight meal.

 


Ingredients

– 2 lbs beef tips (stew meat), cut into bite-sized chunks

– 1 large onion, chopped

– 3 garlic cloves, minced

– 2 cups beef broth

– 1/4 cup Worcestershire sauce

– 1/4 cup tomato paste

– 1 tsp dried thyme

– Salt and pepper, to taste

– 1/4 cup all-purpose flour (to coat the beef)

– 12 oz egg noodles

– Optional: 8 oz mushrooms, sliced

– Optional: Fresh parsley, chopped (for garnish)


Instructions

1. Pat the beef tips dry and toss them with the flour, salt, and pepper until well coated.

2. Place the beef tips into the crockpot along with the chopped onion, garlic, and (if using) mushrooms.

3. Add the beef broth, Worcestershire sauce, tomato paste, and dried thyme. Stir to combine all ingredients.

4. Cover and cook on low for 7–8 hours (or on high for 4–5 hours) until the beef is tender.

5. About 15 minutes before serving, cook the egg noodles according to package directions. Drain.

6. Serve the beef tips and rich gravy over the cooked noodles. Garnish with fresh parsley if desired.

 


Notes

– For an even thicker gravy, mix 1 tablespoon cornstarch with 1 tablespoon water during the last 15 minutes of cooking.

– This recipe can be adjusted by adding vegetables like carrots or celery along with the onions.

– Leftovers keep well in the refrigerator for up to 3 days.
