- 2 large onions, sliced into 1/2-inch rings
- 1 cup all-purpose flour
- 1 cup buttermilk (or regular milk with 1 tbsp vinegar)
- 1 egg
- 1 cup breadcrumbs (panko for extra crunch)
- 1/2 cup cornstarch
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Oil for frying

Prepare the Coating:
- In a bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, paprika, and garlic powder.
- In another bowl, beat the egg and mix it with buttermilk.
- Place breadcrumbs in a third bowl.

Coat the Onion Rings:
- Dip each onion ring into the flour mixture, then into the buttermilk-egg mixture, and finally into the breadcrumbs, pressing lightly to coat.

Fry the Onion Rings:
- Heat oil in a deep pan to 350°F (175°C).
- Fry the coated onion rings in batches for 2-3 minutes per side until golden brown.
- Remove and drain on a paper towel.

Notes
- Use panko breadcrumbs for extra crunch.
- For a spicy kick, add a pinch of cayenne pepper to the batter.
