Ingredients
– **Meatloaf:**
– 1 lb ground beef
– 1 lb ground pork
– 1 cup breadcrumbs
– 2 eggs
– 1/2 cup milk
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 tsp salt
– 1/2 tsp black pepper
– 1/2 cup barbecue sauce (divided)
– **Potato Casserole:**
– 4 large potatoes, peeled and thinly sliced
– 1 cup shredded cheddar cheese
– 1/2 cup sour cream
– 1/4 cup melted butter
– Salt and pepper, to taste
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, eggs, milk, chopped onion, minced garlic, salt, pepper, and half of the barbecue sauce. Mix until just combined and form into a loaf shape.
3. Place the meatloaf in a greased baking dish.
4. In another bowl, toss the sliced potatoes with the cheddar cheese, sour cream, melted butter, salt, and pepper.
5. Arrange the potato mixture evenly around and over the meatloaf.
6. Drizzle the remaining barbecue sauce over the meatloaf and potato casserole.
7. Bake in the preheated oven for about 60 minutes, or until the meatloaf is cooked through and the potatoes are tender.
8. Allow the dish to rest for 10 minutes before serving.
Notes
– For extra flavor, add diced bell peppers or a sprinkle of smoked paprika to the meat mixture.
– Adjust salt and pepper according to your taste.
– If you prefer a crispier potato topping, broil for the last 3-5 minutes of baking.
