Description

Ingredients

  • 2 large eggs

  • 2 cups old-fashioned rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans or walnuts (optional)
  • 1 cup M&Ms or chocolate candies (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Stir in the oats, chocolate chips, coconut, nuts (if using), and M&Ms or chocolate candies (if using).
  • Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier texture, refrigerate the cookie dough for 30 minutes before baking.
  • You can substitute the nuts and M&Ms with other add-ins like raisins, dried cranberries, or butterscotch chips.
