Description

These Cinnamon Cream Cheese Muffins are soft and fluffy, featuring a sweet cream cheese center and a cinnamon-sugar topping. They offer a delightful blend of flavors and textures, making them perfect for breakfast or as a snack.

 


Ingredients

– 2 cups all-purpose flour

– 1 cup granulated sugar

– 1 tablespoon baking powder

– 1/2 teaspoon salt

– 1 teaspoon ground cinnamon

– 1/2 cup unsalted butter, melted

– 1 cup milk

– 2 large eggs

– 1 teaspoon vanilla extract

– 8 oz cream cheese, softened

– 1/4 cup powdered sugar

– 1/4 cup granulated sugar (for topping)

– 1 tablespoon ground cinnamon (for topping)


Instructions

1. Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it.

2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.

3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.

4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

5. In a small bowl, beat the softened cream cheese with the powdered sugar until smooth.

6. Fill each muffin liner halfway with the batter. Place a spoonful of the cream cheese mixture in the center of each, then cover with more batter, ensuring the cream cheese is fully enclosed.

7. In a separate small bowl, mix together the granulated sugar and ground cinnamon for the topping.

8. Sprinkle the cinnamon-sugar mixture generously over the tops of the muffins.

9. Bake for 18-20 minutes, or until a toothpick inserted into the muffin (avoiding the cream cheese center) comes out clean.

10. Allow the muffins to cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.

 


Notes

For an extra touch, drizzle melted white chocolate or vanilla glaze over the cooled muffins. Store in an airtight container at room temperature for up to three days.
