Description

These Cinnamon Apple Oatmeal Cream Pies are a cozy twist on the classic. Soft and chewy oatmeal cookies are packed with cinnamon-spiced apples and sandwiched around a creamy vanilla filling. Perfect for fall or anytime you’re craving comfort food!

 


Ingredients

**For the Cookies:**

– 1 cup unsalted butter, softened

– 1 cup brown sugar, packed

– 1/2 cup granulated sugar

– 2 large eggs

– 1 tsp vanilla extract

– 1 1/2 cups all-purpose flour

– 1 tsp baking soda

– 1 1/2 tsp ground cinnamon

– 1/2 tsp salt

– 3 cups old-fashioned oats

– 1 cup finely chopped apples (peeled)

– 1/2 tsp nutmeg (optional)

**For the Cream Filling:**

– 1/2 cup unsalted butter, softened

– 1 1/2 cups powdered sugar

– 1 tsp vanilla extract

– 1-2 tbsp heavy cream or milk


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

3. Add eggs and vanilla; mix until combined.

4. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg (if using), and salt. Gradually add to wet ingredients.

5. Stir in oats and chopped apples.

6. Scoop dough onto prepared baking sheets and flatten slightly.

7. Bake for 10–12 minutes or until edges are golden. Let cool completely.

8. For the filling, beat butter until creamy. Add powdered sugar and vanilla, then beat until fluffy. Add cream/milk to adjust consistency.

9. Spread or pipe filling onto the flat side of half the cookies, then sandwich with remaining cookies.

 


Notes

For best results, chill the cookies before assembling. Store cream pies in the fridge for a firmer filling or at room temperature for a softer texture.
