This Churro Stuffed French Toast combines the crispy, cinnamon-sugar coating of a classic churro with the rich, custardy goodness of French toast. Stuffed with a creamy filling, coated in cinnamon sugar, and fried to golden perfection, this indulgent breakfast or brunch treat will satisfy any sweet tooth!

For the Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

For the French Toast:

  • 8 slices thick-cut bread (brioche or Texas toast works best)
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 2 tbsp granulated sugar
  • Pinch of salt
  • 2 tbsp butter (for frying)

For the Cinnamon Sugar Coating:

  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  • Prepare the Filling:

    • In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
    • Spread the mixture on 4 slices of bread, then top with the remaining slices to form sandwiches.
  • Make the Egg Mixture:

    • In a shallow dish, whisk together eggs, milk, vanilla, cinnamon, sugar, and salt.
  • Cook the French Toast:

    • Heat a non-stick skillet or griddle over medium heat and melt butter.
    • Dip each stuffed sandwich into the egg mixture, coating both sides evenly.
    • Cook for 3-4 minutes per side, until golden brown and crispy.
  • Coat in Cinnamon Sugar:

    • In a shallow dish, mix sugar and cinnamon for the coating.
    • Immediately after cooking, coat each French toast in the cinnamon sugar mixture.
  • Serve & Enjoy:

    • Serve warm with maple syrup, whipped cream, or chocolate sauce for extra indulgence!

Notes

  • For an even richer taste, add a pinch of nutmeg to the egg mixture.
