This Churro Stuffed French Toast combines the crispy, cinnamon-sugar coating of a classic churro with the rich, custardy goodness of French toast. - 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
For the French Toast:
- 8 slices thick-cut bread (brioche or Texas toast works best)
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 2 tbsp granulated sugar
- Pinch of salt
- 2 tbsp butter (for frying)
For the Cinnamon Sugar Coating:
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon

Prepare the Filling:
- In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread the mixture on 4 slices of bread, then top with the remaining slices to form sandwiches.

Make the Egg Mixture:
- In a shallow dish, whisk together eggs, milk, vanilla, cinnamon, sugar, and salt.

Cook the French Toast:
- Heat a non-stick skillet or griddle over medium heat and melt butter.
- Dip each stuffed sandwich into the egg mixture, coating both sides evenly.
- Cook for 3-4 minutes per side, until golden brown and crispy.

Coat in Cinnamon Sugar:
- In a shallow dish, mix sugar and cinnamon for the coating.
- Immediately after cooking, coat each French toast in the cinnamon sugar mixture.

Notes
