Ingredients

For the Cookie Dough:
• 1/2 cup unsalted butter, softened
• 1 cup packed brown sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1 3/4 cups all-purpose flour
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt

For the Pop Tart Mix-In:
• 2 Pop Tarts (any flavor of your choice), coarsely crumbled

Instructions

  • Preheat & Prepare:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  • Make the Dough:
    In a large bowl, cream the butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the creamed mixture until just combined.

  • Incorporate the Pop Tart:
    Gently fold in the crumbled Pop Tart pieces until evenly distributed. The mix will add a subtle fruity crunch and extra flavor to your cookies.

  • Shape the Castle:
    Scoop tablespoon-sized portions of dough onto the prepared baking sheet. For a castle theme, press and shape some cookies to form towers or walls. You can use extra dough to create additional architectural details if desired.

  • Bake:
    Bake in the preheated oven for 10–12 minutes, or until the edges are set and lightly golden. (They may appear slightly underdone in the center, which is perfect for a soft texture.)

 

  • Cool & Decorate:
    Allow the cookies to cool completely on a wire rack. Once cooled, use royal icing and assorted candies to decorate and assemble your cookies into a castle design.
