Description

These Breakfast Pastry Pinwheels are a delightful and savory way to start your day. Made with flaky puff pastry, crispy bacon, scrambled eggs, and melted cheese, they’re perfect for breakfast, brunch, or as a grab-and-go snack. Easy to prepare and customizable with your favorite fillings.

 


Ingredients

– 1 sheet frozen puff pastry, thawed

– 6 oz bacon, diced

– 8 large eggs, beaten

– 2 cups shredded sharp cheddar cheese

– 4 tablespoons unsalted butter, softened

– 3 garlic cloves, minced

– 2 teaspoons sriracha or ketchup

– Kosher salt and freshly cracked black pepper, to taste

– Optional: Jalapeño pepper jelly, for serving


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. In a skillet over medium heat, cook diced bacon until crispy. Remove and drain on paper towels.

3. In the same skillet, scramble the beaten eggs until just set. Season with salt and pepper.

4. In a small bowl, mix softened butter, minced garlic, and sriracha or ketchup.

5. Roll out the thawed puff pastry on a lightly floured surface to smooth creases.

6. Spread the butter mixture evenly over the pastry.

7. Layer scrambled eggs, cooked bacon, and shredded cheddar cheese over the buttered pastry.

8. Starting from one edge, tightly roll the pastry into a log. Slice into 1-inch (2.5 cm) pieces.

9. Place pinwheels cut-side up on the prepared baking sheet.

10. Bake for 15–18 minutes, or until golden brown and puffed.

11. Serve warm, optionally with jalapeño pepper jelly on the side.

 


Notes

– For a vegetarian version, omit bacon and add sautéed vegetables like spinach or bell peppers.

– These pinwheels can be assembled ahead of time and refrigerated overnight before baking.

– Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in the oven for best texture.
