Description

Crisp, buttery almond cookies shaped like hearts for a sweet treat! Perfect for Valentine’s Day or any occasion, these almond cookies are a delightful snack with a hint of nuttiness. Simple to make, yet irresistible!


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/4 tsp salt
  • 1 tsp almond extract
  • 1/4 cup sliced almonds (optional, for topping)

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, beat the butter and sugar together until creamy and smooth.
  • Add the egg and vanilla extract, and continue beating until combined.
  • In a separate bowl, whisk together the all-purpose flour, almond flour, salt, and almond extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Roll the dough into a ball and wrap it in plastic wrap. Chill in the refrigerator for 30 minutes.
  • On a floured surface, roll the dough to about ¼-inch thickness. Use a heart-shaped cookie cutter to cut out shapes.
  • Place the cookies on the prepared baking sheet and top each with a slice of almond (optional).
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Add a little powdered sugar on top of the cookies for extra sweetness.
  • For a slightly different flavor, substitute some of the almond flour with coconut flour.
  • Store cookies in an airtight container for up to 1 week.
