- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1/4 tsp salt
- 1 tsp almond extract
- 1/4 cup sliced almonds (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, beat the butter and sugar together until creamy and smooth.
- Add the egg and vanilla extract, and continue beating until combined.
- In a separate bowl, whisk together the all-purpose flour, almond flour, salt, and almond extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into a ball and wrap it in plastic wrap. Chill in the refrigerator for 30 minutes.
- On a floured surface, roll the dough to about ¼-inch thickness. Use a heart-shaped cookie cutter to cut out shapes.
- Place the cookies on the prepared baking sheet and top each with a slice of almond (optional).
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Add a little powdered sugar on top of the cookies for extra sweetness.
- For a slightly different flavor, substitute some of the almond flour with coconut flour.
- Store cookies in an airtight container for up to 1 week.
